Owner, Matt Gillespie, and General Manger, Regi Houle, are about to break a world record! Brandon Knott and Matt Neff, art teachers at Bryan High School in Bryan Ohio, are currently building the coffee mug for the World's Largest Irish Coffee at the Defiance College Art Department for Gillespie's Map Room in Downtown Cleveland's Historic Warehouse District (1281 W. 9th St. Cleveland, Oh 44113). Regi reached out to his college roommate, Matt, for this special project. After thorough research Matt and Brandon agreed to take on the project to help attempt to set a world record to be featured in The Guinness Book of World Records. coffee mug on there own time Neff said "we are extremely excited to be apart of this record breaking achievement" The event is sure to be full of regulars and new friends interested in tasting what is now Cleveland's best Irish coffee. Use a commercial grinder set between 2.25 oz and 3.0 oz of coffee per 64 oz of water. In a primed* Bunn airpot the coffee will stay good for 4 hours. *Priming simply involves brewing or pouring into an already warmed airpot. For this drink I would suggest a coffee that has a gentle body and finish so that the whiskey is brought to the forefront. The specific coffeee I would recomend would be the Colombian Supremo. A high grade colombian coffee like the supremo has a gentle and even variation between the intial taste, body, and finish with a pleasent aftertaste. Though this is primarily a coffee drink you don't want the whiskey to be hidden by a sour coffee or harsh aftertaste. A medium roasted coffee is preferable. Guard against a dark roast with whiskey, to be careful that you don't mask the flavor of the whiskey with a harsh or bitter aftertaste in a dark roast coffee. If you must use a dark roast only use a 98% percentile grade espresso on a very course grind.
