Use a commercial grinder set between 2.25 oz and 3.0 oz of coffee per 64 oz of water. In a primed* Bunn airpot the coffee will stay good for 4 hours. *Priming simply involves brewing or pouring into an already warmed airpot. For this drink I would suggest a coffee that has a gentle body and finish so that the whiskey is brought to the forefront. The specific coffeee I would recomend would be the Colombian Supremo. A high grade colombian coffee like the supremo has a gentle and even variation between the intial taste, body, and finish with a pleasent aftertaste. Though this is primarily a coffee drink you don't want the whiskey to be hidden by a sour coffee or harsh aftertaste. A medium roasted coffee is preferable. Guard against a dark roast with whiskey, to be careful that you don't mask the flavor of the whiskey with a harsh or bitter aftertaste in a dark roast coffee. If you must use a dark roast only use a 98% percentile grade espresso on a very course grind.
Recommended Coffees Colombian Supremo $6.90 per lb. Sumatran Manheling $6.85 per lb. The Map Room in Cleveland Ohio will be brewing the Worlds Largest Irish Coffee on Saturday, March 21st.
